Easy to use and clean
The pasta machines are very simple: mix the ingredients using the “mixing shaft”
and extrude the dough through the die, creating the desired pasta format.
They are also easy to disassemble for a thorough cleaning and all the parts of the machine in contact with the pasta are made of stainless steel for a maximum hygiene.
Do not use any cleaning products. A cloth soaked in water is enough if you clean it immediately after turning the machine off: if the pasta dries out, it will be much more difficult to clean the machine, so we always recommend a thorough cleaning after each use.
Presses, laminating and combined machines
Presses machines push the dough through the dies which produce different sizes of pasta.
The laminating machines, on the other hand, are made up of rollers of different sizes that allow the dough to be rolled, adjusting the thickness at will through a small lever.
With laminating machines you can create the pasta sheet using the rollers noodles, and cutting it vertically to produce tagliolini, pappardelle, etc.
Finally, the combined machines are those machines that allow the installation of additional accessories to add new types of production, such as the Monferrina P.nuova, a laminator that allows the installation of a press unit for the production of extruded pasta.
Accessories
There are different accessories to complete your machine, like the rotating knife, the ravioli group, the gnocchi group and the most important one: dies.
The rotating knife is able to cut only short cut pasta; you can adjust its speed to obtain pasta such as fusilli, caserecce, etc. but also very small pasta to be used in broths or soups.
For the dies you can choose between bronze or PTFE version. The first are the most common ones, producing a rough and porous pasta, perfect for collecting the sauces. The PTFE version dies instead, produce a smoother and more glossy pasta.
Some machines allow the insertion of accessories such as the Multipasta, which allows you to produce ravioli with interchangeable molds, gnocchi or the cutting unit that allows you to cut vertically the dough produced with the machine, producing different sizes of long pasta depending on the thickness of the cut: tagliatelle, fettuccine, pappardelle etc.
Ravioli production
As we mentioned before, you can easily prepare ravioli as well using a pasta machine.
If your model allows it, you can mount the accessory called Ravioli Group or, for Monferrina machines, the Multipasta is also available.
This last one lets you prepare perfect ravioli using interchangeable moulds, which means that you need simply to take out the mould you are using, and replace it with another one at your choice. You can use every kind of stuffing your fantasy suggests, from meat to vegetables, and the results will amaze you!
